SHOP NEWS…..

Some lovely new products in the shop this month including
Belvoir - non alcoholic ‘ Hugo Spritz Cocktail
Suitable for vegetarians and vegans. It makes a bougie drink to serve to at a party over lots of ice with a slice if cucumber and a sprig of mint.

Divine Fairtrade chocolate, in various flavours, also vegan friendly.

A little recipe for delicious chocolate chip cookies using Divine dark or milk chocolate.

100g dark or milk chocolate chopped into chunks (not too small)

125g salted butter

75g granulated sugar

75g soft brown sugar

1 free range egg

150g plain flour

1/2 tsp vanilla extract.

Melt the butter. Mix the 2 types of sugar in a mixing bowl and pour over the melted butter and mix well, add the egg and vanilla and beat until blended, mix in the flour. Add the chopped chocolate (if you want to go off piste you can also add a handful of dried fruit and or nuts such as pecans and I sometimes replace 25g of flour with 35g of oats, these are very forgiving cookies and come out really well no matter what you do to them!!)

Mix everything together, you will have a sloppy sort of mixture, line a large baking sheet with non stick paper and drop dessertspoon size dollops of mixture well spaced apart (they do spread quite alot) you will need to bake these either on several baking sheets or in batches. Bake for 8-10 mins until just turning golden brown. allow to cool on the tray for a few moments while they harden up slightly then transfer to a cooling rack to fully cool (hard to resist eating them while still warm though!!!). Everyones oven is different, so adjust cooking time to suit, if you bake for longer they will be crispy if you bake for less they will be soft and chewy.

Don’t forget that Salt Bakehouse are outside on the forecourt every Tuesday morning between 10.30 and 11.30 with their van selling delicious sourdough bread and pastries and a reminder for new subscribers, you can pick up your daily newspaper in the shop seven days a week.
